Burmese Chicken Recipe

Ingredients :

6 cloves

1 tablespoon

1 cup

Whole chicken or chicken pieces

Ghee or cooking oil

Medium onions, chopped

Bay leaves

Ground turmeric

Chili powder

Ground cardamom

Ground cumin

Ground coriander

Ginger

Cinnamon stick

Lemon grass (white part only), chopped

Garlic, crushed

Grated fresh ginger

Chicken stock

Method :
  • If using a whole chicken, cut it into pieces.

  • Heat the ghee or oil in a large pan, add the onion and cook, stirring until the onion is soft.

  • Add the bay leaves, turmeric, chili powder, cardamom, cumin, coriander, ginger, cinnamon stick, lemon grass, garlic and fresh ginger.

  • Cook stirring for 1 minute or until fragrant.

  • Add the chicken pieces and stir to coat with the mixture.

  • Stir in the stock and simmer, covered for 45 minutes to 1 hour or until the chicken is tender.
